Letters from the Wine Oracle

Date November 5, 2007

Dear Cru Master

What a difference a year makes – Paul Jaboulet Parallele 45 : 2005 versus 2006

If anyone else is contemplating opening a bottle of 2006 P.J Parallele 45 this evening…my advice is
STOP IMMEDIATELY! Step away from the bottle, put your hands above your head and get someone else to hide it away for another year or two.

After quaffing a 2005 the other night I convinced myself the 2006 would, ‘be fine’. It was not. The aromas and savoury flavours tried to surface after a desperate decanting but alas it just wasn’t going to happen. It was as if a blanket had been thrown over the wine - awash with sharp tannins and greenness I was forced to hand it over to the kitchen for use in a rather excellent pepper corn sauce.

Oracle.
