A recipe from our Cooksister

I really enjoy cooking - I guess its something that runs in the family - well, my mom’s ‘ordered chaos’, ‘ingredients on the roof’ soups only just give her a qualification :)

Anyway, one of my stock standard’s is some form of spicy chicken and a bit of couscous on the side - but my combinations have reached a plateau of sorts.

In search of some variety to the theme, I stumbled on this great little recipe on Cooksisters Recipe Page

MOZARELLA, SUN-DRIED TOMATO AND BASIL CHICKEN BREASTS (serves 2)Ingredients

2 large boneless, skinless chicken breasts
2 Tbsp mayonnaise or cream cheese
6-8 sun-dried tomatoes (I use Merchant Gourmet - but you could also use home-made slow-roasted tomatoes)
Half a ball of mozzarella
Handful of fresh basil leaves
Salt and Pepper to taste

Well - I’m going to give it a bash and I think I’ll crack open a bottle of Diemersdal Single Vineyard Sauvignon Blanc 2007 to wash it down!

    It’s only a pleasure! Hope it all went according to plan. Did the Diemersdal work well with it? We had a realyl delicious Simonsig 2003 Cabernet last week with a roast leg of lamb. When you’re living in Europe and drinking French, Spanish & other wines, you forget just how satisfying a good SA cab can be. Mmmmmm.

    Well I subbed the sundried tomatoes for pepperdews - which worked nicely. I also added a good deal of basil as I am a fan.

    The Diemersdal went beautifully - complimenting the herby and salty sourness of the cheesy part’s of the dish wonderfully!

    Wish more people would realise how satisfying ALL SA wine is!
