Wedding Wine - what wine would you want to drink?

My cousin - The Wine Oracle - is getting married on the 7th of Feb and for some reason he has asked me to source the wine for his wedding.
Now his wife to be is Welsh and her entire family is coming out as well as all their pale skinned European friends - which means the wine has to be South African and it needs to impress. No pressure.
There are 90 guests with mixed preferences towards both red and white wine. The menu also lends itself to a mix of both red and white wine - and we’ll need some sparkling vino for the toasts and pre reception toots.
So in short we need:
Sparkling Wine
Red Wine
White Wine
Now I have a few in mind but I’m not 100% sure on the quantities required.
So I am hoping all of you can help me with a wine recommendation for each category, varietal recommendations and the amount one generally requires of each (bearing in mind that the Welsh do like to drink!).
I look forward to your feedback and debating the merits thereof - in short: what wine would you want to drink at a wedding?

That Thelema Mountain Red looks like it could be good value - never tasted it. How much a case?

What about Rusticus? The Tilled Earth Red/Cab Sav - I think they also make a Voignier.

Ok now me being totally biased I’m going to suggest my folks Cap Classique - The Brut Rose. Super popular, it’s a pinotage/chenin Cap Classique. It’s got fruit and yummy shortbread flavours going on for it.
It sounds like the wedding is full of the best kind of guests - those that like to have a H.U.G.E party - so I’m going to recommend 18 bottles of Cap Classique (3 cases of 6). This should get things off to a great start.
Oh and if you’re looking for a delicious easy drinking white the Moreson Chenin Blanc is perfect. You’d probably need 15-18 bottles of that.

must also make a point of coming out to Bread&wine @ moreson - ive heard the restaurant is amazing.

Bread & Wine is fantastic. Their Pinehurst Cab is normally a good value bet too.

Cru when you’d like to come out just give me a shout - you should have my email address. We’d love to have you round and, provided it’s not smack in the middle of harvest, our winemaker could take you through a little bit of a different tasting.

Fizz: Chamonix MCC Blanc de Blanc - as toasty as Bolly without the price burn. Ludwig Maske at La Cotte Inn in Franschhoek has stock.
Red: Riebeek Cellars Barberossa Cab 05 from Riebeek Kasteel, great value at R25/bottle or Mooiplaas Berry Red 2007 for R27.50. Doolhof Cape Roan 06 is a remarkable Shiraz blend for R35.
White: Rooiberg Sauvignon Blanc 2008, jam packed with tropical fruit for R22. Goedverwacht Crane White 2008 - R20 buys you the best Colombard in the Cape.

you never mentioned whether it was a lunch or evening affair, altho probably wouldn’t need too much for a lunch…
other factor is that feb can still be excruciatingly hot down here, so predominantly white wines, and iced water. very few would drink red wine if its hot. and of course the bubbly…
