Under the Influence of Riesling Wine Festival : The Food
February 25, 2009
Now before I give you a report back on the Riesling at this amazing festival - I have to mention the food.
It was nothing short of amazing.
PJ Vadas and his partner in crime, Vanessa, fed hundreds of guests with a wide selection of tapas style food bits and I’m telling you they almost stole the show with some of their creations.
Here are couple of them in pictures:
(Beetroot, Radish, Crispy Thing and Sweet Plum Sauce)
(I don’t know but the little carrot in the bottom right corner looks like a little devil)
(Oxtail Croquette, Sour Dough Crust with Pesto and Marmalade : The most amazing thing I have ever eaten.)
(Ginger Biscuit, Cream and Berry with thin Wafer)
(Same as above but with Fig - amazing with port : perfect pairing)
(Warm Apple Tart with Mulled Spice and Ice Cream)
These are just some of the amazing things that were floating around at the festival - I don’t think anyone left hungry or unsatisfied.

[...] All of the dishes were designed to pair with the crisp Rieslings. We were witness to this day of preparation 2 weeks before where an extended tasting by the Chefs ended up with a raiding of the superb Raith butchery in the garden centre for “research purposes”. It was well worth it, have a look at some of the food creations here. [...]
